There are days when I crave something sweet, but without heavy ingredients or guilt. That’s how these flourless, sugar-free coconut muffins were born — from the need for something simple, pure, and truly enjoyable. From the very first batch, the aroma of coconut filling the kitchen makes you impatient to take them out of the oven.
Their texture is incredibly light and moist, while the shredded coconut on top adds that subtle hint of crunch that makes them stand out. They’re the kind of treat that pairs perfectly with a warm cup of coffee in the morning or a relaxing afternoon tea.
I love this recipe because it proves you don’t need flour or sugar to create something genuinely delicious. With just a few simple ingredients, you can make a dessert the whole family will enjoy — without compromising on taste.

Preheat the oven to 180°C and grease the muffin tins.
In a large bowl, crack the eggs and whisk them together with the honey and vanilla extract until slightly frothy.
Gradually add the shredded coconut, stirring gently and continuously, until the mixture becomes airy and sticky.
Using an ice cream scoop, fill the muffin tins without overfilling them, as they will rise while baking.
Bake for 20–25 minutes, or until the muffins are golden brown on top. Start the timer. Bake your muffins for 25 minutes.
Transfer the muffins to a wire rack and let them cool.
If you like, for garnish, melt some white chocolate and drizzle it over the muffins.
Don’t overbake the muffins → Since they don’t contain flour, they can dry out more easily if left too long in the oven. As soon as they turn golden and a toothpick comes out almost clean, they’re ready.
Use room temperature ingredients → This helps the batter combine more smoothly and creates a fluffier texture.
Do not overmix the batter → Mix just until the ingredients are combined. Overmixing can make them heavier.
Fill the liners properly → Do not fill them to the top. Ideally, fill them up to ¾ so they rise nicely without overflowing.
Want a moister result? → Add an extra tablespoon of melted coconut oil.
For a stronger coconut aroma → Lightly toast the shredded coconut before using it. It gives an amazing aroma!
If you store them in the refrigerator → Warm them for 10–15 seconds before serving to make them soft and fragrant again.
