For the tart base

 A little butter or coconut oil for greasing the baking tray

For the custard cream

 250 ml milk (or plant-based milk such as unsweetened almond milk)
 2 eggs
 3 tbsp honey or agave syrup (optional – adjust to your taste
 1 tsp vanilla extract
 1 tbsp cornstarch
 1 pinch salt

Preheat the oven to  200°C and grease the muffin tins.

Line the pastry into the molds and prick the base with a fork.

Whisk the eggs, then add the vanilla, salt, and cornstarch.

Heat the milk and slowly pour it into the mixture while whisking.

Add the natural sweetener (if using).

Fill the pastry bases up to ¾ full.

Bake 20-25 minutes until they are set and golden. Start the timer. Bake your egg tarts for 25 minutes.
