From the very first batch, the aroma of coconut filling the kitchen makes you impatient to take them out of the oven. Their texture is incredibly light and moist, while the shredded coconut on top adds that subtle hint of crunch that makes them stand out. They’re the kind of treat that pairs perfectly with a warm cup of coffee in the morning or a relaxing afternoon tea. I love this recipe because it proves you don’t need flour or sugar to create something genuinely delicious. Don’t overbake the muffins → Since they don’t contain flour, they can dry out more easily if left too long in the oven. As soon as they turn golden and a toothpick comes out almost clean, they’re ready.

A: Yes! Once completely cooled, store them in a freezer-safe bag for up to 2 months. Thaw at room temperature or warm them for a few seconds in the microwave.

Q: Are they suitable for a low-carb diet?

A: Since they contain no flour or sugar, they can more easily fit into a low-carb eating plan, depending of course on the other ingredients you use.

Q: Can I make them fully vegan?

A: Yes, if you replace the eggs with flaxseed “eggs,” the recipe can easily be adapted into a vegan version.

Q: Why did my muffins turn out wetter in the center?

A: Since they contain no flour, their texture is naturally more moist. However, if they are too wet, they likely need a few more minutes of baking or a slightly reduced amount of liquid in the recipe.

For a different texture

  • Instead of finely shredded coconut, try coconut flakes for a more textured result.

For a dairy-free version

  • If the base recipe contains eggs, you can try a flaxseed “egg” (1 tbsp ground flaxseed + 3 tbsp water).

  cup honey
 100 g coconut flakes
 ¼ tsp vanilla extract
 ¼ tsp baking pounder

Directions

Preheat the oven to  180°C and grease the muffin tins.

In a large bowl, crack the eggs and whisk them together with the honey and vanilla extract until slightly frothy.

Gradually add the shredded coconut, stirring gently and continuously, until the mixture becomes airy and sticky.

Using an ice cream scoop, fill the muffin tins without overfilling them, as they will rise while baking.

Bake for 20–25 minutes, or until the muffins are golden brown on top. Start the timer. Bake your muffins for 25 minutes.

Transfer the muffins to a wire rack and let them cool.

If you like, for garnish, melt some white chocolate and drizzle it over the muffins.
